I’m not sure about most of you, but when I open the fridge in the morning to get something to eat for breakfast, I look for a quick option. I work three 12 hour shifts per week, so on my workdays I typically do not sit down to eat breakfast and I need something on the go. I was getting bored with bananas and smoothies I had made the night before, which led me to finding a recipe on Pinterest that I am now (slightly) obsessed with. I tweaked the original recipe slightly to fit my tastes better, but there are plenty of areas for substitutions if you want to experiment!
These energy balls have been such a lifesaver for me! The recipe will yield roughly 25-30 depending on how big you make them. I keep them in my fridge for about one week and they are super easy to grab on the way out the door! Not only that, but they are SUPER filling and high calorie from the oats and nut butter in them! I could eat the whole bowl if I’m being honest…
1 1/2 cups nut butter (I used sunflower seed butter)
1/2 cup honey
2 cups quick oats
2/3 cups coconut flakes (unsweetened)
1.5 tbsp flax seeds
1.5 tbsp chia seeds
1 tsp vanilla
Dash of sea salt
1/2 cup semi-sweet chocolate chips
Mix all of the ingredients together in a large bowl. Set in the fridge for at least 30 minutes to harden. (I have made them right away without doing this step– not ideal, but it can be done! Just a little messier…) Take out of fridge and roll into balls. Enjoy!
